Banana and oat cookies are another great, easy bake for using up leftover bananas (something we always seem to have in our house!) As much as we love banana bread, these cookies are a delicious, quick alternative. They share the same tasty banana flavour, but with the addition of oats feel a little bit more wholesome.

These biscuits have got a nice soft, chewy texture and you get the lovely flavour of banana coming through. And with the oats, you can almost convince yourself that they are healthy (they’re not). They’re also easy to make with kids as you just have to mix everything together in one bowl. So, the next time, like us you have a load of bananas needing used why not try these for a change?!

How can kids help to make banana and oat cookies?

These cookies are really easy to make so they’re a great bake for kids to do. There’s no need for any special equipment like mixers, you can make these with just a bowl and some wooden spoons.

As with most bakes, kids can help measure out all the ingredients and mix them together. If you have young children, they might enjoy getting to peel and mash the bananas. The cookies themselves are very easy to form – there’s no need to roll or cut them out, simply dollop spoons of the cookie mixture onto the baking trays.

What can I use instead of self raising flour?

If you don’t have self raising flour, swap it for an equal amount of plain or all-purpose flour and put in an extra teaspoon of baking powder.

What is baking spread/baking margarine?

Baking spread, (things like Stork), is just a non dairy margarine that’s perfect for baking. It makes cupcakes and cakes lighter and fluffier than butter, which means it’s a great, cheaper alternative.

How do you store banana oat cookies?

These cookies will keep for a few days in an airtight container. If you want to keep them for longer, you can wrap them and pop them in the freezer for up to a few months. Make sure you defrost them fully before you serve them.

Ingredients

100g (1/2 cup) butter or baking margarine/spread
100g (1/2 cup) caster sugar
1/2 teaspoon vanilla extract
2 bananas
125g (1 cup) self raising flour*
150g (1 + 2/3 cups) porridge oats

* If you don’t have any self raising flour, swap it for an equal amount of plain or all-purpose flour and add a teaspoon of baking powder.

Preheat your oven to 180C / 170C Fan / 350F and line 2 -3 baking trays with baking paper or greaseproof paper.

Mix the wet ingredients together

Get your kids to measure the butter and chop it into small pieces (if it isn’t already soft, blast it in the microwave for a few seconds to make it easier to mix). Or if you’re using a baking spread, simply add it straight into a large mixing bowl.

Measure out the sugar and add it to your mixing bowl.

Add the vanilla extract. If your children are quite young, you might need to hold the teaspoon steady while your kids pour in the vanilla or vice versa. Older children should be able to manage this job themselves.

Mix the sugar and butter together with wooden spoons.

Now, get your kids to peel and mash the bananas with a fork or even a masher. When they are well mashed add them to your mixing bowl.

Give everything a good mix.

Measure the flour and porridge oats out and add them to your mixing bowl.

Get your kids to mix everything together with wooden spoons, until it is all thoroughly combined. It will be a fairly wet mixture.

Bake the banana oat cookies

Get your kids to spoon tablespoons of cookie dough onto your baking sheet. Your kids should find this easy enough to do and enjoy being responsible for this, but you might need to neaten up the dollops a bit just to make sure they are all roughly the same size.

Make sure they are spaced out nicely on your baking trays as they’ll spread a little bit when they bake.

Bake them for approximately 15 minutes. They’re ready when the edges start to go golden. They’ll still be very soft when they come out of the oven, but will harden slightly as they cool.

Remove the cookies from the oven and leave them on the baking trays for a few minutes to cool slightly, before putting them on a wire rack to cool completely.
